Jar of Rowan

Rowan Jelly

This bitter sweet stuff is brilliant added to gravy and sauces. And legend has it rowan berries help ward off evil. So double win…

Ingredients:

1kg rowan berries, picked and washed

600ml water

1 lemon

A couple of sprigs of rosemary

Sugar

  • Stick a plate in the freezer
  • Simmer the berries in the water until soft
  • Strain through jelly bag (or if, like me, this is not a thing you have, an old pillow case)
  • Pop back in a pan with the juice from the lemon and bring to the boil
  • After about 15-20 minutes drip some of the liquid onto the plate from the freezer
  • The jelly is done when it starts to solidify and wrinkle on the plate
  • Strain the liquid into clean jars
